Makes: 9 pieces
Ingredients
Oats – 1 cup
Desiccated coconut – ½ cup
Almonds – ¼ cup
Pumpkin seeds – ¼ cup
Honey – 2.5 tbsp
Sugar – 2.5 tsp
Butter – 1.5 tbsp (plus extra for greasing)
Cinnamon powder – ¼ tsp
Chocolate chips – 1 tbsp
Black raisins – 8–10 nos
Method
Preheat the oven to 140°C.
Dry roast oats in a pan until light brown.
In the same pan, roast the desiccated coconut, almonds, and pumpkin seeds until golden brown. Combine this with the roasted oats.
In another pan, heat butter, honey, and sugar together. Stir continuously until the sugar melts and the mixture starts to bubble.
Turn off the flame and add the oats and nut mixture. Mix in cinnamon powder and chocolate chips.
Grease a deep baking dish with butter and pour the mixture into it.
Wet your fingers and press the mixture evenly to form a flat layer.
Bake at 140°C for 20 minutes.
Let it cool for 20 minutes, then gently mark lines with a knife to outline your desired bar shapes.
Let it sit for 1 more hour to set completely.
Unmould and cut into pieces.
Wrap each bar with cling film and store in a cool, dry place at room temperature.
